Blackberry Mixed Leaf Salad
1 1/2- 2 Cups Herb Salad Mix
1/2-2/3 Cups Blackberries
1/2 Cup Mixed Cherry Tomatoes
1 TBSP Raw Sunflower Seeds
1-2 TBSP Goat Cheese
1 1/2 TBSP Traditional Balsamic Vinegar By Gourmet Blends
(serves two as a side salad)
It is officially spring! And that means that the berries in the produce department are looking mighty juicy! Summertime berries are so sweet and usually for sale in bigger containers at lower prices this time of year so I can’t resist, even in my green salad! This recipe is super easy.
Wash and dry your produce. Slice cherry tomatoes in half and then combine all of the ingredients in a large bowl, save for a small amount of blackberries. I like using tongs to toss it all around until the goat cheese and the balsamic vinegar have had a chance to combine a bit.
Use the tongs to plate your salad into your favourite salad bowl and top with the fresh clean berries you put aside just a moment ago. Now your salad is ready to eat.
