Summer is here! This means it is time to get your summer menu going and the less fuss the better. This salad is so easy, you can count the ingredients on one hand!

Start with a generous bed of butter lettuce- my favorite. Next take one avocado and cut it up. Then you take some chunks of feta cheese and throw it on the avocado and lettuce. Last, you give it a drizzle of balsamic and olive oil, then hit it with a bit of fresh ground black pepper.

Voila. Your salad is ready. You can eat it as a main or serve it as a side dish. Either way this salad shows how easy it can be to eat healthy food that can also be fast food! On the run? No problem. Take this salad and put it into a to-go container, grab a fork and you have a meal for the road.
