Dates and Spinach Salad

Ingredients:
Fresh Baby Spinach
Avocado
Feta
Dates
Pistachio Nutmeats
Balsamic Vinegar – Gourmet Blends Traditional Balsamic
Olive Oil
Pepper

Lately I’ve been craving spinach.  Maybe it’s my inner Popeye.  That plus my Mom bringing over a brick of feta is what led me to create this new recipe.  Since feta and dates go well together, and I also had pistachio nutmeats on hand, I knew I had enough ingredients to make a delicious salad!  It turned out so tasty that I wanted to share it.  🙂

Start by creating a pretty little bed of fresh baby spinach.  I drizzle some Gourmet Blends Traditional Balsamic before proceeding to add more layers.  Then add slices of avocado, followed by chunks of feta cheese, chopped dates (I like royal medjool, they are my favourite dates) and pistachio nutmeats.  The pistachio nutmeats I use are raw and unsalted but any variety will do.  Just keep in mind that the feta cheese is already pretty salty.

Once all the ingredients are assembled I add more balsamic, a little olive oil, and a hint of fresh cracked black pepper.  The contrast of salty and sweet in this salad is what really makes it work for me.  I hope you like it.
