Ingredients:
Aged English Coastal Cheddar
8 Ounces Crimini Mushrooms aka Baby Bellas
Green Onions aka Scallions

These baked cheesy mushrooms take finger food to the next level.
Take approximately 8 ounces Crimini Mushrooms, aka Baby Bellas. Remove the stem and wash them using a veggie wash and fresh water. Rinse well and let them dry.

Place the mushrooms open face up on a cookie sheet or baking tin. I used my Mom’s old escargot baking tins because the little grooves are the prefect size for these little mushrooms.

Take your white aged English Coastal cheddar and cut to fit into the mushroom caps. There is no need to overstuff the mushrooms. If there is too much cheese it will just melt off. If you have just enough cheese it will melt into the mushroom and bake in a cheesy goodness.

Preheat the oven, and bake on 350 for 25-35 minutes. If cheese is melted, take them out of the oven and let them cool for a few short minutes. Put them on a plate, sprinkle fresh chopped green onions generously over the top and serve.
