Lime Arugula Salad

Ingredients:

1 Fresh Lime

Arugula

1 Orange

1 Avocado

Fancy Shredded Lite Mexican Blend Cheese

(Sharp Cheddar, Monterey Jack, Asadero, Queso Blanco)

By now you know I like to use what I have on hand so as to not waste food.  The other day I was rifling through the fresh ingredients I had left in the fridge, which was not much.  It seemed like there was “nothing to eat.”  I literally pulled everything out of the fridge to see what may go together that I didn’t think of before.   This time I ended up with “Lime Arugula Salad.”

Create a bed of arugula.  Slice up one orange and one avocado and squeeze an entire lime over the top, then sprinkle with shredded cheese.  Voila!  Simple, delicious, tangy, healthy.
