Ingredients:

1 avocado
1 cucumber
1 tomato
1 slice feta crumbled
1 tbsp olive oil
1 lemon
1 pinch black pepper
1 toss and it’s ready

I was on the phone with my Mommy the other day. She was walking to the market and trying to figure out what to make for dinner. “What do you have in the fridge?” I asked. “One tomato and one cucumber,” she replied.
“Hmm, do you have any feta? You always have feta at home.” Of course she did! Since she knew she had a lemon from my garden too she decided to only buy an avocado and call it a day. We decided to call it “1 Simple Salad.”

The key ingredient to this salad is the feta. It’s deliciously salty so when you toss it up with the lemon, pepper, and olive oil it creates its own dressing. What makes this salad so great is it requires only a few basic ingredients that most of us have leftover from fresh produce shopping for the week.

If you aren’t familiar with feta I highly recommend getting adventurous. Do a quick search to see if there is a neighborhood Middle Eastern, Greek or Italian market. At these specialty stores you can buy a slice of feta cheese from a brick. Get a good size piece so you can have some left over. If you ask very nicely they may give you some of the special feta water so you can store your feta in it which will make it last longer, but be sure to take your own container.Otherwise, it’s okay to buy a solid piece of feta and no water because I have a trick. After a few days I rinse it with cold water, dry it with a fresh paper towel, and then store it wrapped tightly in a fresh piece of cellophane then a secondary wrapping in a ziplock baggie or tupperware container. Make sure you push all of the air out of the wrapping before storing in the refrigerator.

Is getting feta from a brick outside of your comfort zone? No problem. Most supermarkets carry feta. You can even buy crumbled feta since it will still work great with this dish. If you are generally unfamiliar with feta not to worry. It’s only food and should be fun. Next week I will be sharing three quick and easy recipes using leftover feta.
