Ingredients:

1 Large Peach, pitted and sliced
1 Fresh Lime, slice and squeeze over the peaches
Cayenne Chili Powder, a few pinches
Coconut Oil Spray
1 Avocado
3/4 Cup Sliced Raw Sugar Snap Peas
1 and 1/2 cups Fresh Arugula
Black Cherry Balsamic- by Leonardo e Roberto’s Gourmet Blends

Preparation:

The trick to this recipe has a few secrets, 1) Seasoned Grilled Peaches, 2) Black Cherry Balsamic (by Gourmet Blends), 3) Arugula.

I use a grill pan for this dish.  Let your grill pan pre-heat on medium heat for about 5 minutes.  Then turn the flame off, spray with coconut oil spray.  Turn the flame back on to medium/medium low.  Place the washed sliced peaches on the grill pan.  Carefully squeeze fresh lime and sprinkle cayenne chili powder over the peaches while they cook.  Beware your peaches may sizzle, if you prefer you may also season the peaches prior to placing on the grill pan.

While the peaches are grilling assemble the rest of the ingredients.  Use arugula as your canvas.  Add the chopped sugar snap peas and sliced avocado.  Drizzle with balsamic vinegar.

I particularly love the Leonardo e Roberto’s Gourmet Blends Black Cherry Balsamic combined with the flavor of the seasoned grilled peaches and creamy avocado.  The sugar snaps are perfectly crunchy and refreshing against the spicy hearty arugula leaves.

If you only have butter lettuce, or mixed greens or iceberg, or whatever lettuce on hand, just go for it.  The salad will still taste great.  But if you are heading out to shop for specifics then get the arugula, aka “rocket.”  I love using arugula in this recipe.  It is a hearty, bitter and peppery green so it pairs so nicely with the sweetness of the peaches and the Black Cherry Balsamic.

Once the peaches are done grilling add them on top and then add a touch more Black Cherry Balsamic.

Also, don’t hold back on adding summer fruits to your savory green salads.  Nothing can beat fresh sweet nature’s candy, especially in the summer.  Using unexpected combinations can result in pleasant tasty healthy surprises.  Simply put- Kitchen Anarchy can be a good thing!
